Living for 50 years, the Oscietra sturgeon egg comes in shades of gold and pale browns.

This is the second-largest species of Caspian Sea sturgeon, weighing up to about 600 pounds, and it produces slightly smaller caviar berries than the Beluga sturgeon.

Many connoisseurs prefer its more intense flavor than Beluga, dur to its subtle, nutty taste.
